I ran three full hybrid cookware sets through my own kitchen for two months. Release, sear, what is in the coating, and whether the whole set holds up to daily cooking.

I ran three of the most talked about hybrid cookware sets through real cooking for 60 days. I cooked eggs and steaks in the fry pans, stir-fried in the wok, seared on the griddle, simmered stock in the pots. What I cared about: how cleanly food released across every piece, how well they seared, what was in the coating, how heat moved, and whether the whole set held up after months of daily use.
I have put more than 50 pieces of cookware through this same routine, and this writeup is what I would tell a friend who cooks most nights and wants to buy one set and be done.

A good hybrid set lets a dry egg slide right out of any piece, with no oil, no preheating ritual, no babying. I ran the same plain egg test 50 times across both fry pans, the wok and the griddle.

I want one even, golden crust across the whole pan, the wok, and the griddle, not a great patch in the middle and pale meat round the edges. I cooked matched ribeyes on each piece at the same heat for the same time. The gap between these three sets was bigger than I expected.

Tri-ply or multi-layer construction is the difference between an even cook and a sad pale patch on one side. I checked every piece in each set with an infrared thermometer. Single-ply offerings flagged obvious hot spots, especially in the larger pots and the wok.

I used metal spatulas, forks, the lot, every day across all 10 pieces of the Novara set. At this price a hybrid set needs to take real kitchen abuse. Scratches, high heat, full dishwasher cycles, none of it should change how the pans, wok, or pots cook.

The sets I keep using are the ones that wipe clean in under a minute. I gave higher marks to surfaces that shrugged off stuck bits across every piece, pans, wok and pots, and I tested both a quick handwash and a full dishwasher run.

The first thing I noticed was the surface. The PureClad set arrived as ten pieces: two hybrid fry pans (26cm and 30cm) with lids, a 30cm wok, two 2-litre pots with lids, and a 26cm griddle. Most hybrid cookware still leans on PTFE under the hood. HexClad gets a lot right. The laser-etched hex ridges sear hard, the tri-ply build heats fast, and the TerraBond ceramic coating is now PFAS-free. The pan I cooked with held up well. The catch is the price. At $399 (on sale from $532) for the six-piece set, it asks a lot, and you still need a bit more oil than a plain non-stick to feel that slick release.

Siraat is a four-piece titanium set with a hammered finish, sold as the Complete Edition for $497. There is no chemical coating, which is genuinely refreshing, and it works on every cooktop I tried, induction included. The look is gorgeous, almost too pretty to use. The tradeoffs are real though. You need more oil and more patience for that easy release, and the hammered surface gets a little fiddly to clean after sticky cooks.


After two months of side-by-side cooking, Novara didn't just check more boxes. It solved more of the day-to-day frustrations.
